Cheesecake is great. But try adding a chocolaty twist to a classic dessert. Chocolate cheesecake will satisfy any sweet-tooth.




Ingredients

  • 2 cups (220 g) chocolate cookies, crushed
  • 3/4 cup (170 g) butter, melted
  • 4 8-oz. (230 g) packages cream cheese
  • 1 cup (200 g) white sugar plus 1 tbsp.
  • 1 cup (230 g) sour cream
  • 3 eggs
  • 1 cup (180 g) semi-sweet chocolate, melted
  • 2 tsp. coffee powder (do not use instant coffee)
  • 1/4 tsp. almond extract

Steps

  1. Preheat your oven to 450 F (230 C, gas mark 8) and set aside a 9 to 12" springform baking pan.
  2. Put the chocolate cookies in a plastic bag or a freezer bag and place it on a counter.
  3. Crush the cookies by pressing the base of a drinking glass into them. The size of the crumbs is up to you.
  4. Pour the crumbs into a medium bowl, along with the teaspoon of sugar and all of the melted butter. Mix these together using a wooden spoon.
  5. Pour the mixture into the pan you set aside earlier.
  6. Press the crust evenly into the base of the pan and up its sides using your fingers.
  7. Beat the cream cheese in a large bowl until it gets creamy.
  8. Add the almond extract and cup of sugar to the cheese and mix them in until they're incorporated.
  9. One at a time, mix each egg into the cheese mixture.
  10. Add the coffee powder, sour cream, and melted chocolate to the bowl.
  11. Mix everything together until the batter becomes a rich dark color.
  12. Pour the batter onto the cookie crust and use a spatula to even out the top.
  13. Bake the cake for 10 minutes. After the 10 minutes, reduce the oven temperature to 300 F (140 C, gas mark 1) and bake it for another hour. Turn off the heat after it's done.
  14. Cool the cake in the oven for about 3 hours. Leaving it in the oven will keep it from cracking when you place it in the refrigerator.
  15. Place the cake in the refrigerator after it's had a chance to thoroughly cool. The colder the cheesecake gets, the firmer it will become.
  16. Gently remove the cheesecake from the pan when you're ready to plate it.
  17. Cut the cheesecake into individual slices, serve them on dessert plates and drizzle leftover or additional melted chocolate over the top of the slices for an additional treat.

Tips

  • Avoid whipping the batter, as this creates air pockets that will leave cracks in the cake while baking.

Key Lime Cheesecake



Ingredients

For the crust:
1  1/2 cups flour
1/4 cup butter
1 tsp vanilla
pinch salt
1/2 cups brown sugar
1 egg


For the cheese filling:
1 pkt (250gm) cream cheese
3/4 cup evaporated milk
1 lime-extract juice
zest of a lime
2 eggs-separated
1/2 cup sugar
1/4 cup flour


How to make Key lime cheesecake


1. For the crust Mix altogether the dry ingredients. Then rub in butter and after that the egg to make a smooth dough.

2.Roll the dough 1/4 inch thickness and place in a loose bottom cake tin , ( make you place a grease-proof paper at the bottom of the cake tin. Press dough firmly at the side too about 2 inches height. Leave to chill while you make the the filling.

3. Whisk egg white till stiff and leave aside,in a small bowl mix evapourated milk with lime juice, keep aside till it curds.
4. In another bowl, add cream cheese and yolk, beat till smooth, add sugar, the milk  curd, zest and flour, beat till smooth. Then fold in the egg whites slowly with a metal spoon.

5. Pour cheese batter into crust shell leaving about an inch space at the crust. It will rise when it bake.

6. bake in a preheated oven at 220 C for 20 mins and lower heat to 200 C and continue baking for another 25 mins or till firm .leave the cake cool in the oven by just opening the oven door.

7. when cool, chill cake before cutting.

note:
you can pipe your fav whipped cream on top if you like by creaming the whipped cream with a little lime juice and zest.


Turtle Cheesecake



Ingredients

2 cups of crushed chocolate cookies (I use Famous Wafers)
1/2 stick butter, melted
20 ounces (2 1/2 packages cream cheese), softened
1 cup sugar
1 1/2 tsps vanilla
1 1/2 TBS flour
3 eggs
2 1/2 TBS heavy cream

Topping
10 ounces caramels
1/4 cup heavy cream
1 cup chocolate chips
1/2 cup chopped pecans

How to make Turtle Cheesecake


Preheat oven to 450 degrees.
Crush cookies in a food processor, pulsing until smooth crumbs.  Combine crumbs and butter in a small bowl.
Press crumb mixture into the bottom of your springform pan.  Use your fingers to evenly mash down the crumbs.
In a mixing bowl, beat cream chees, sugar and vamnilla until smooth and creamy.
Add in flour and eggs one at a time, blend well.  Blend in the cream, mix well.

Pour mixture over the crust and bake 12 minutes at 450 degrees then lower the temperature to 200 degrees and bake for an additional 35 minutes or until set.
Once removed from the oven, let cool for 10 minutes.  Then gently go around the pan with a knife loosening any parts that may stick, slowley release the pan.  Refrigerate for at least 2 hours or overnight prior to topping and for 6 hours or overnight prior to serving.
Melt the chocolate chips in your microwave for about 60 seconds.  Stir and place back in the microwave for an additional 30 seconds if needed for full melting, stir until smooth.  Place melted chocolate in a baggie, snip off the end and drizzle chocolate across cake.
In a small saucepan, combile caramels and cream.
Melt over medium-high heat, stirring constantly till smooth.  Remove from heat and let cool a few minutes...melted caramel is HOT.  use a spoon and drizzle caramel over cake.  Sprinkle with pecans and refrigerate u8ntil serving.

Light Strawberry Cheesecake





 Ingredients
  • 200g cream cheese
  • 110 mL milk
  • egg yolks
  • 70mL butter
  • 3.5 tablespoons flour
  • 1.5 tablespoons corn starch
  • egg whites
  • 130 mL sugar
 

How to make Light Strawberry Cheesecake


  1. Add the cream cheese + milk together and heat it up in a double boiler, stirring constantly.
  2. When the cream cheese has dissolved, add the butter and stir until smooth.
  3. Then add in the egg yolks and mix.
  4. Sift the flour and corn starch together and add into cream cheese mixture until thoroughly blended. Remove from heat.
  5. Beat egg whites with a electric mixer/whisk until it starts to bubble.
  6. Gradually add sugar, continuing to beat until it forms peaks.
  7. Pour the egg whites into the cream cheese mixture and fold until thoroughly blended.
  8. Pour the cheesecake batter into a prepared mold.
  9. Place your mold in a shallow pan of water, and bake at 160 - 170 C until edges have pulled away. (45-60 minutes for cake molds. 20-30 minutes for muffin pans.)
  10. Let the cake cool down and decorate with fresh strawberries and strawberry jam.

Cheesecake Brownies



Ingredients

  • BROWNIES:
  • 1/2 cup butter, melted (i used less)
  • 1 cup sugar (i used less)
  • 1 teaspoon vanilla extract
  • eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

    CHEESECAKE:
  • 1/2 cup cream cheese
  • egg (or egg white)
  • 2 tablespoons sugar


How to make Cheesecake Brownies


  1. Stir butter, sugar, and vanilla together.
  2. Add eggs and beat well.
  3. Separately, mix flour, cocoa, baking powder, salt together.
  4. Add the flour mixture to the egg mixture. Stir well.
  5. Spread the brownie batter evenly into a prepared pan.
  6. Using an electric mixer, beat together the cream cheese, egg and sugar until smooth.
  7. Dollop the cream cheese mixture on top of the brownie batter. Swirl together using a knife or skewer to produce a marble effect.
  8. Bake 30 minutes at 180 degrees Celcius or until knife comes out clean.
  9. Cool in the pan, then cut into bars and serve.


 

Cheesecake cupcakes



Ingredients



  • 2 cups of crushed graham crackers
  • 4 tablespoon of butter, melted
  • 2 (8 ounce) packages cream cheese (room temperature)
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 (21 ounce) can cherry pie filling


How to make cheesecake cupcake


  1. Preheat oven to 350 degrees F (175 degrees C).  Line cupcake tins with cupcake liners
  2. Crush the graham crackers and mix with butter.  Place 1 tablespoon of this mixture in each cupcake liner, and press down on the mixture to make the crust.
  3. In a mixing bowl, beat room temperatured cream cheese, sugar, eggs and vanilla until light and fluffy. 
  4. Fill each cupcake liner with the cream cheese mixture, almost to the top.
  5. Bake for 15 minutes.  Remove from oven and cool.
  6. Top with a teaspoonful of cherry pie filling.
  7. Remove cupcake liner before serving (optional)
